Greetings!
My sincerest apologies for such a delay. Not that anyone reads this of course, but that's all right.
Since my last post. I have not been so busy baking. Only very recently I have been.
I've moved to California back in September, leaving all of my beloved baking equipment back home in England.
I've been churning and having withdrawal. The nightmares of losing all of my baking pans, burntsugar, over cooked meringue.
Beads of sweat causing all my senses to run wild.
Back home in England I fear that I hardly ever had the opportunity to watch my favourite channel ever.
The Food Network.
Here in America, I can watch all day and everyday. That's if my crazy chauvinistic house mate isn't home or he's in a good mood.
However, with all this nonsense happening around me, I caved in and picked up a few things. Like a new pastry blender, piping bags and their tips, and a few vintage pie pans that I could not resist.
Luckily the woman who lives here, (believe it or not the chauvinist is married.) has an assortment of baking pans that she lets me use. So that makes me feel better.
Thanksgiving made its appearance and so did mypumpkin pie! I find that most people enjoy a good slice of pumpkin pie.
I know that I do. But then you'll meet someone who isn't a fan and all you want to do is convince them that it is in fact amazing and that they just haven't had your pumpkin pie.
My dearest friend Donna has been converted successfully..
And of course when there is pie, cupcakes are soon to follow. I can't live without baking cupcakes. I had some pumpkin pie mixture left over, so I decided to make pumpkin pie cupcakes.

Pumpkin Pie Cupcakes with Maple-Brandy Butter cream Frosting.
I am still working on my decorating technique, but that comes with practice and of course experience.
Today I will be baking Strawberry Macaroons for the second time. I had a slight mishap the first time around, and I'm not 100% sure why that happened, but I am sure I will work out the kinks.
And to match those in colour, I will be making Red Velvet Cupcakes. Traditionally you can make boiled frosting or cream cheese frosting. But this is Ruthless Baking. I am going to make coconut butter cream frosting.
Until next time...
Ruthless
